My stomach problems have subsided severely and overall I feel a lot better I would say. I have tried this Quinoa Sushi three times now, one of which with my brother and sister in law, and I think they liked it equally as much as we did ... it´s super easy to make, I had never made sushi before and I even managed to make an ok roll :)<br />
There are a few things that I have found to make the procedure a little bit easier, like draining the quinoa very well before putting it on the Nori and also allowing it to cool completely.<br />

So I guess the procedure is quite straight forward and i´m not even going to try to sound "sushi pro" since i´m soooo far away from being one. but in stead i´ll just list the things I use to make my rolls.<br />
<br />
<b>Nori paper </b>- approx 4 is enough for 2 ppl<br />
<b>Quinoa</b> - I didn´t mesure exactly how much I used but usually I start out with something around a cup and just boil more if needed.<br />
<b>Soy sauce, ginger & Wasabi </b> if prefered<br />
<b>Rice seasoned vinegar </b>(thats what I think it´s called)<br />
<b>Fish - </b> I used salmon and surimi this time<br />
<b>spring onion</b><br />
<b>cucumber</b><br />
<b>sweet pepper</b><br />
<b>avocado</b><br />
and all the vegetables you like :)<br />

All I do is boil the quinoa as instructed - drain for a while after boiling and stir in maldon salt and rice vinegar to taste.<br />
Take out the Nori, I use a bamboo mat to roll the sushi, makes it quite easy, evenly spread the quinoa over the nori. What I have found is the thinner you can spread the Quinoa the better, other wise you are basically just eating Quinoa and nori :/ and leave a 2cm "gap" of clean nori on the end furthest from you. Put in as much vegetables and fish as you want - wrap the nori over the fish/veg and pull a little bit to tighten up the roll and then just keep rolling until you reach the end then dab the clean nori with water and keep rolling and your done !! easy peasy, go eat :D<br />

It´s a very simple easy to make cake, and I suppose you can use any fruit you want like pineapple or apples etc. <br />
<br />
50g butter, plus extra for greasing<br />
1 teaspoon vanilla essence<br />
165ml milk<br />
3 large pears<br />
240g caster sugar<br />
2 large eggs<br />
300g plain flour<br />
2 tsp baking powder<br />
1/2 tsp bi carbonated soda<br />
160g sour cream<br />
1 tsp cinnamon (the next time I will make this I will probably skip or at least reduce the cinnamon)<br />
150g soft light brown sugar<br />
<br />
-Heat
the oven to 170C/ 335F / gas mark 4.<br />
-Lightly butter a
20cm cake tin ( preferably not a loose bottom one since it might leak) and line the sides so they reach higher than the tin with greaseproof paper.<br />
-Stir the milk and essence together, Stir well and set aside to infuse.<br />
-Peel and quarter the pears,
remove the cores and cut each quarter in half length ways, or any other way that you feel is aesthetically appealing. <br />
-For the
cake, whisk the caster sugar and eggs in a bowl until light and
fluffy. Sieve the flour and baking powder and soda into the bowl, then stir it in,
along with the milk and cream.<br />
- Gently
melt the butter in a small pan, add the cinnamon (if you want the cinnamon) and brown sugar, and
stir until it has formed a smooth paste. Spread this evenly around the
bottom of the cake tin.<br />
-Place the pear slices neatly over the sugary
paste, then spread the cake mixture on top.<br />
Bake for 25 minutes,
or until the top of the cake turns a pale golden brown, and the cake has risen. Reduce the
temperature to 160C /320F/gas mark 3 and bake for
another 25 minutes (I actually had to bake it for 25 min longer than the required time), or until a sharp knife or skewer comes out clean.
Remove from the oven, leave to rest for five minutes, or until cooled and invert to a serving plate.<br />

As it´s got cinnamon in it, it probably tastes fantastic with vanilla ice cream, but I have someone I was going to serve this to who happens to love chocolate whipped cream so thats what I made. I´ts really easy just sieve cocoa and powdered sugar to heavy cream and leave in the fridge for about ten minutes and then whip it like usual.<br />
This is a really dense cake so you can´t eat a lot of it but it´s really good, I recommend you have a go!<br />

Well it´s been a very long process and a very very frustrating - hair pulling one (belive me I could find a few more adjectives for this one ) ! But on to a little project I made a while ago, it´s super easy and it´s brilliant if you don´t have a lot of window space for a little herb garden ;) It´s basically a little extension of my window sill, I was running out of space with all my plants so I decided I needed one of these little things. I made it out of a pallet that I tore apart and cut the boards down to short pieces, to make the top part. a longer thinner wood is holding it together on the bottom with a "few" screws.<br />

I drilled a hole in the side of the shelf and tied a ribbon to the radiator to make sure it would not tip over if someone would bump into it ... really don´t wanna clean a whole lot of dirt of the floor.<br />

Ofcourse if I get a slice of cake and it´s OK and I know that it´s really healthy - it for some reason gets a little better though, it´s like you forgive things a little bit, for being not as good as the same cake with kilo of butter in it.<br />

They are made from Dates, Nuts and rolled in Coconut.<br />
They are fairly easy to make and all you basically need is a food pro - or if you don´t have one use the blender like I did.<br />
Here is the recipe<br />

<b><i>Coco Date Treat</i></b><br />

<u><i>Ingredients </i></u><br />

1 cup almonds<br />
1/2 cup walnuts (this 1 1/2 cup of almonds and walnuts, can be basically any nut combo you like)<br />
20 Dates (chopped up)<br />
1 tbsp honey <br />
1/3 cup pure coco<br />
1/2 tsp vanilla<br />
a pinch of salt<br />
1 tbsp coconut oil ( I actually skipped this but you might need it depending on the mixture of nuts you use)<br />

<u><i>Method</i></u><br />
<br />
Place the nuts in the food processor(blender) blend until smooth, add the rest of the ingredients and allow to blend until smooth (if it´s very greasy just add more coco). Remove from food processor and form the little balls, keep a dish with the shredded coconut besides you and roll them in the coconut as you get along. You can store them in an airtight box in the freezer or cooler for a few weeks.<br />

I wasn´t able to photograph the process of rolling them since it´s a bit messy .. and I didn´t want that all over the camera. But it´s a very quick process and the reward is very nice.. you get to eat them as soon as they are ready. I brought a few for my sister to try and my nephew got to try them and even he loved them, so you momas and papas can make these as a healthy treat for your kids as well :D<br />
And talking about Dates - have you tried bacon wrapped, grilled Dates? their sorta yummie :)<br />

But I have to say the frosting is the "come back for more" key in this cupcake .. it´s very nice. </div><div style="text-align: left;">Here is the recipe for the cake, I split it between 12 cupcake liners but I think I should have used 13 since they were a bit overflowing, but it adds up to around a quarter cup each (of batter)</div><div style="text-align: left;"><br />
</div><div style="text-align: left;"><i><span style="font-size: large;">Vanilla cupcakes</span></i></div><div style="text-align: left;"><br />
</div><b></b><i><span style="text-decoration: underline;">Ingredients</span>:</i><br />
1/2 cup unsalted butter, at room temperature<br />
2/3 cup granulated sugar<br />
3 large eggs<br />
1 1/2 teaspoons vanilla bean paste or vanilla extract<br />
zest of 1 small lemon and 1 small orange<br />
1 1/2 cups all-purpose flour<br />
1 1/2 teaspoons baking powder<br />
1/2 teaspoon baking soda<br />
1/4 teaspoon salt<br />
1/4 cup milk<br />
(I experimented a little with the milk, I took a quarter cup put a little white wine vinegar and filled up with milk, and let it sit for approx.5 min put around a quarter cup of raspberries along with the milk in a blender - mix +sift the stones out, and used 1/4 cup of that mix. I don´t think it did a lot of difference to the cupcakes, but I still thought I should let you know )<br />
<br />
<i><span style="text-decoration: underline;">Directions</span>:</i><br />
Preheat oven to 370(I used it without the fan, bottom heat). Prepare the muffin tin with paper liners and set aside.<br />
In the bowl of an electric mixer beat together sugar and butter until light and fluffy. Beat in the eggs one at a time, combining well before adding the next egg. Beat in the vanilla paste or extract and lemon + orange zest.<br />
Combine the flour, baking powder and salt together in a medium bowl.<br />
With the mixer on low speed, slowly add in half the flour mixture, then the milk, then the remaining flour. Mix just until combined.<br />
Scoop the batter evenly between each of the muffin cups. Bake for around 17 minutes, or until a toothpick inserted in the center comes out clean.<br />
Remove the cupcakes from the pan and let cool on a wire rack completely.<br />

3/4 cup frozen raspberries<br />
1 cup frozen strawberries <br />
tbsp lemon juice<br />
1 tbsp honey<br />
1tbsp sugar<br />
200 gr butter, room temp<br />
1 cup icing sugar<br />
1 tsp vanilla <br />

<i><u>Directions </u></i><br />
<br />
Put the berries in a small saucepan, spread the sugar on top and add lemon juice, allow to simmer over low heat. When Raspberries have fallen apart and the strawberries are soft move to the blender and blitz away. Strain the mixture back into the pot getting rid of most of the seeds (I like a little bit of seeds just for looks) put the saucepan back over very low heat - add honey and allow to simmer until it gets a bit thicker - allow to cool. Add butter and 1/4 cup icing sugar in a mixer and mix until fluffy, <br />
add around half of the berry mixture to the butter and mix, add 2/4 icing sugar and mix, add rest of berry mixture - mix - and then rest of sugar + vanilla and mix. Pipe as desired when the cakes have cooled completely.<br />

I did make one mistake by adding 1 cup + a little under a 1/4 cup icing sugar and as you can see its not completely smooth when you pipe it, so I changed it in the recipe above :D<br />

Thats kinda what happens on every x-mas and easter with the decorating, usually with xmas i´m decorating on xmas day (i don´t have any kids, so it´s not as horrible as it sounds) and on easter this year I did it on the day after easter day :D haha<br />
But anyway easter was lovely and relaxing with loads of chocolate : )<br />

I didn´t make any super complicated decorations, I just kept it simple and clean. I got a few branches from a friends garden and then a few small ones from my "back yard". I´ve been looking at some of these easter posts and I´m so amazed at how talented people are at making these extraordinary decorations ... I´ll definitely try it next year ehhmm... thats what I always say ;) but I think i´ll let the pictures speak for them selves .......<br />

</tbody></table> I didn´t have a vase that was big enough for these HUGE branches, so I got a pallet somewhere and tore it apart and "built" this box out of it .. it wasn´t too complicated ;) then I cut the top half off, of a 2 litre soda bottle, and placed it with some water in the bottom of the box :)<br />

He for example designed the library in the presidential habitats (the Icelandic white house so to speak) and a few restaurants as well, but I think he is mostly known for his Scandinavian / danish modernism furniture, which is still sold today some 30 years after his passing.<br />
The chair is very cute and simple, made from solid Teak (i´m pretty sure it´s Teak). The upholstery although probably very practical and pretty a "few" years back, was a little tired and to be honest yucky :/ So I made the decision that this little stool was gonna be pretty again. I vent to a place here in Iceland and bought some sheepskin, the lady was nice enough to cut a whole skin in half because I only needed half of it (and then it laid in my laundry room for a while because I suffer from "begin a phobia"). <br />

<span style="font-size: large;"><span style="font-family: inherit;">I failed a little by not reading the directions perfectly - so they kinda puffed all over the place and ended up falling apart, or at least most of them, and thats why they don´t look prettier - but they ended up tasting really nice and they were eaten up in no time (which is, let´s face it the most important thing), the apple ones were the best ones. If you make this which is fairly easy just be sure to press them tightly into the tin, and i´m sure they will turn out perfect. Like i said mine fell apart but it was sort of nice since they ended up as bite size dumplings :D </span></span><br />

And then I made a very good porridge this morning, and i´m NOT a porridge person but even I loved it - so if you´r trying to make your kids eat oatmeal they are going to love this i´m sure.<br />

Remove from heat. Strain through a fine sieve into a clean bowl. Cover with plastic wrap and place in the fridge to cool and thicken.</span></li>
<li class="MsoNormal" style="margin-bottom: 0.1pt; margin-top: 0.1pt;"><span style="font-size: small;">Use a small knife to cut a V-shaped piece out of the top of each cake, about 1.5cm deep, leaving a 2cm-wide edge. Spoon the lemon curd evenly among cupcakes.</span></li>

these measurements are approximate so if you want more or less just change them<br />

<i>1/4 cup oatmeal</i><br />

put everything in a small pot on low heat and allow to simmer until oats are cookes<br />

Allow to simmer for a while until fruits are soft - move to a blender or use a stick blender to puree the fruits - move back to pot and allow to boil until your ready to enjoy your breakfast - I sliced up one pear to go with it.<br />

But the other day the weather was good enough when I came home and I had, had enough of that ugly thing, so I attacked it :D<br />

</tbody></table>Here your oven is hopefully warm, and you pop the dish in the oven for about 20 - 30 minutes, but of course this depends on the dish you choose - so it´s best to take a look after 15 minutes if it´s golden brown on top and your whole house smells divine your cake should be ready. It can be served right away with some whipped cream or ice cream, and it can also be made in advance (then I would opt for the dish not the ramekins) and re heated once your ready to eat it.<br />

Shawarma means "turning" in English, since the meat is usually cooked on a turning skewer, Shawarma is basically a kebab, but the difference I noticed is that usually when I get a kebab they have a thin yogurt sauce on it, but this one had a more paste like sauce with it. It takes a while to make since you have to marinate the meat and make the bread but overall I don´t think it´s that complicated, and most of the work involves watching the meat marinate :D.<br />
I decided I would serve it with Naan bread, solely because I love Naan bread.<br />
What surprised me with the Shawarma was that despite the strong flavors of the Tahini sauce and the marinade, it was incredibly fresh and DELICIOUS when it was all in the bread along with crispy lettuce, onion, cucumber and tomatoes, and then I sneaked a little hot sauce in there as well :)<br />

Marinate your meat:<br />
To get really thin slices of the meat, take the frozen chicken and leave it outside for about 1/2 an hour . The meat should be in the half defrosted stage, at this stage using a sharp knife thinly slice the chicken. Marinate the chicken with all the marinade ingredients and leave it for minimum 2 hours or overnight in the refrigerator. <span style="color: red;">The next time i´ll be making this (and yes there will definitely be a next time) i won´t be slicing the chicken as thin as described here - when it´s been marinating it gets a bit mushy, and I noticed that the thicker slices were a lot more appetizing and cooked nicer </span></i><br />

Take the oil in a wide open pan, add all the chicken pieces and cook until it looks dry.</i><i>Prepare the sauce:Add all the sauce ingredients in a bowl and mix it well. <span style="color: red;">I did this when i was preparing the marinate and let it set while the chicken was marinating - I thinned it down with a bit of water since it was very thick - might have been that thick since I used greek yogurt not regular.</span></i><i>Assemble the shawarma:<br />
Take the pitta/naan bread, lay it flat. We went to visit them today and it never stops to amaze me how tiny, cute and fragile (well not really that fragile but they do feel like it) newborns are, and she´s no exception there. she´s got a full head of hair and just all together perfect :) a real princess. We brought them a little gift we made, a very simple thing to make but really cute I think, and of course something sweet, so I made chocolate toffee cup cakes (delishhh). I used the recipe on Cafe Fernando for Devils Food cake, edited it a little tiny bit and made half of the original recipe.</div><br />

<li> 1/3 cup boiling water</li>
<li> 1/6 cup whole milk, scalded</li>
<li> 105 grams all-purpose flour</li>
<li> 1 teaspoon baking soda</li>
<li>1/2 tbsp cinnamon</li>
<li> 1/4 teaspoon salt</li>
<li> 150 grams granulated sugar</li>

Preheat the oven to 175°C (350°F) and line approx 16 cupcake tins.<br />

sift cocoa powder into bowl 1 and poor boiling water along with scalded milk and whisk until smooth - allow to cool.<br />

<div style="text-align: left;"><span style="font-size: small;">I had some leftover (read: I failed at making toffee </span>) toffee that didn´t set the way i wanted it so I thought it would be perfect to pipe a little bit of it into the cupcakes - so I used a piping bag and spooned the very sticky toffee into it and just squeezed the tip into the cup cake while it was warm, it did run a little bit making this process kind of messy, but it worked (I didn´t manage to photograph this because of sticky fingers and toffee everywhere). they are supposed to turn out chewy but mine turned out runny, but delicious so I froze them in case I could use them for something like these cup cakes.<br />

</span></span></span></span>We decided a few days ago that the present for them would somehow include both of the pregnancy shoots i´ve done for her, for her first child <span style="font-style: italic;">Emma </span>which she had a little over a year ago and then this new baby girl that i shot only 3 days before she gave birth to her :). So somewhere while I was pondering the matter I came up with this super easy yet chic <span style="font-style: italic;"><span style="font-style: italic;"> </span></span>idea of finding some rough wood and glue-ing the two photos onto the plank. So we literally went to the docks and found a small plank that was perfect, just rough enough. I put it in the oven on the lowest setting available (170°F) to dry it, then I painted wood oil based varnish and let it dry. I positioned the photos and glued them on first with epoxy, which i should have skipped and gone straight to UHU stick glue, which worked like a charm. then I painted another coat of varnish on top of the whole thing incl. the pictures, with a coarse paintbrush. That took some time to dry and I probably did around 3 rounds with the varnish.<br />
And this is the outcome.<br />

My boyfriend sanded down the broken part of which it stands so that it would stand straight and also the top to avoid splinters and such, then we drilled in two screws in the back and strung a vinyl string between them to be able to hang it on a wall.</div></div><span style="font-weight: bold;"><br />
